Allegany State Park is an all-season destination, sitting atop 65,000 acres between Salamanca, New York and Bradford, Pennsylvania. The park opened in 1921 after New York State acquired 7,000 acres of land in the area. The first permanent cabins were built in 1925. Before that, campers used WWI military surplus tents.
Dedicate a few hours one weekend a month to cooking up large quantities of food. It is not much more work to make twice as much as you would usually make. If all you do is cook up two chicken dinners and two beef dinners, you will have four ready-made dinners to serve when you are in a time crunch. Each meal can be frozen. When you are ready to eat, just microwave a casserole or put it in the oven.
Depending on what time of the day you’ll be meeting, and how many meals you are assembling, you may want to add a couple of frozen pizzas to the grocery list. Then half way through, you can break for lunch.
Wash vegetables and fruit before placing them in the refrigerator. That way they’ve been pre-cleaned making Meal Prep on a budget easier. The kids can grab a healthful snack without worry of harmful bacteria lurking on the surface. Also, Bacteria on food rapidly multiplies, when left at a temperature between 45 F and 140 F. Avoid this danger zone as much as possible by quickly refrigerating cooked foods. Refrigerate or freeze leftovers immediately after dinner to prevent bacteria from forming in the food.
The goal of working with a wellness coach is to mesh all these things together and find a sense of balance. If you are eating a well-balanced diet, but you are not working out, then you may still fill fatigued. If you are working out, but eating ice cream and pizza you may not be dropping any weight. If you are eating well and working out, but your stress level is still through the roof then maybe you need some stress management techniques. It all needs to work together in order for you to experience positive health results, have good relationships, feel good about yourself and manage stress.
The kids love trying new meals and now they will say, “Mom, this is a keeper” or “you can write family favorite next to this one.” Now, years later, my husband would tell you that I am a good cook.
Throw all the ingredients for beef stew into your crock pot in the morning, set it to “low” and turn on the timer for a delicious pre-made meal that will be ready when you walk in the door in the evening. There is nothing faster than “done”.
